A classic hollandaise sauce is the key to a great eggs Benedict. It’s the perfect topper for crispy toasted English muffins, with basted or poached eggs. Some will put Canadian bacon, ham, or regular bacon as well.
However, making a good sauce can be heartbreaking. If you don’t do this one just right, the butter and egg mixture can break apart yielding in a gross looking mess.
The good news is that it’s not that difficult to make. A small bowl or mason jar, a good hand blender, and you are on your way to a basic hollandaise sauce.

Ingredients you need:
Making your easy hollandaise:
- Add salt, pepper, egg yolks, and lemon juice to a small bowl or jar.
- Blend with an immersion blender to incorporate.
- Melt butter in a small saucepan, until just melted, and remove from heat immediately.
- Drizzle melted butter while running the immersion blender and blend all the melted butter in. Blend until sauce is starting to thicken.
- Serve warm, store leftovers in the fridge.
Do I have to use an immersion blender?
For myself, I prefer a hand held immersion blender, as a jar blender is harder to get all the delicious sauce out of. You CAN use a hand whisk to make this, and it’s great exercise, but it is more difficult.
A hand blender makes this so easy to do and is my tool of choice here.

Are the eggs safe? It doesn’t look like they are cooked!
The hot butter, and lemon juice go a long way toward helping “cook” the egg yolks without scrambling them. However, if you are nervous about that, you can use pasturized eggs.
I personally find no issue with this, as I know where my eggs come from, and what the chickens were fed. I also use them in my homemade mayo recipe with no issues.

Ingredients
- 2 egg yolks
- 1/2 teaspoon salt
- pinch of white pepper
- 1 teaspoon lemon juice (fresh or bottled)
- 1/2 cup (1 stick) butter, melted
Instructions
- Add salt, pepper, egg yolks, and lemon juice to a small bowl or jar.
- Blend with an immersion blender for 30 seconds to incorporate.
- Melt butter over low heat, until just melted, and remove from heat immediately.
- Drizzle melted butter while running the immersion blender and blend all the melted butter in.
- Continue to blend for an additional 30 seconds so sauce can begin to thicken.
- Store leftovers in the fridge.
