What should my dough look like?
Your dough is the foundation of your finished product so lets cover some tips and troubleshooting.
With your dough ingredients in your stand mixer, start at a slow speed and let the ingredients start to combine before picking up speed. Once the dough starts to pick up you can increase to a medium speed. After several minutes the dough should be picking up and pulling away from the edge of your mixing bowl. You can then slow it down and then stop and check the consistency.
If your dough is sticky you need to add a little flour. Just add a bit at a time so you don’t over do it. When it is not sticky and is firm but still soft you have the ideal dough consistency.
How to cut cinnamon roll dough
After you roll out your dough, layer the cinnamon mixture and roll it into a carpet style roll. Now you are ready to cut. To avoid pinching your dough you can cut your dough with a high quality serrated knife using gentle pressure.

- Milk
- Eggs
- Butter
- Cinnamon

- Salt

- Preheat oven and prepare baking dish.
- Mix flour, salt, and sugar together in a large bowl.
- Add milk, egg, and butter and combine.
- Roll dough out into a rectangle.
- Sprinkle with part of the sugar and cinnamon mix. Sprinkle baking dish with rest of sugar mix.
- Roll dough up, and slice.
- Lay cut circles in the pan and bake.
- Prepare drizzle and pour over baked cinnamon rolls.
- In a large bowl, mix together the flour, salt, and 2 tablespoons of sugar.
- Add in the milk, egg, and 3 tablespoons of butter. Mix until a dough forms.
- Dump dough out onto a floured surface and roll out into a rectangle.
- Use the remaining butter to rub over the surface of the rolled out dough.
- In a small bowl, combine the ⅓ cup sugar, brown sugar, and cinnamon. Mix well then sprinkle a third on the bottom of the baking dish and the rest over the top of the buttered dough.
- Roll the dough up into a carpet-style roll and slice in about 1-inch slices. Lay them in the pan, sitting up against each other.
- Bake for 15-20 minutes.
- In a small bowl, combine the milk and powdered sugar. Mix well. Drizzle over the tip of your cooled cinnamon rolls.

Store airtight so keep them fresh and soft. They will keep for 3 days in the refrigerator or you can freeze them without icing. Then when you are ready to warm them in the oven you can give them a fresh layer of icing as soon as they come out.

- 2 1/2 cups all purpose flour
- 1/3 cup plus 2 Tablespoons granulated sugar
- 1/3 cup brown sugar
- 3/4 cup milk
- 1 egg
- 3 Tablespoons butter softened
- 3 Tablespoons cold butter
- 2 Tablespoons ground cinnamon
- 2 teaspoons baking powder
- Pinch salt
For the drizzle
- 1/2 cup powdered sugar
- 2 Tablespoons milk
Instructions
- Preheat the oven to 400 degrees and butter a square baking dish (8x8 is best).
- In a large bowl, mix together the flour, salt, and 2 tablespoons of sugar.
- Add in the milk, egg, and 3 tablespoons of cold butter. Mix until a dough forms.
- Dump dough out onto a floured surface and roll out into a rectangle.
- Use the softened butter to rub over the surface of the rolled out dough.

I ve tried quick recipes for cinnamon buns before and I was a little worried they d turn out hard and biscuit-like like the other ones I ve tried but they didn t! I followed the recipe exactly (except I used a little less salt than the recipe called for) and it was perfect! I didn t have any problems rolling out the dough on a floured surface. I have a ceramic (from the dollar store!) rolling pin not wooden so maybe that helped..? They rose in the pan they look great and taste even better. 5 stars 2 thumbs way up!;)
