Creamy, smokey and spicy roasted red pepper hummus! A healthy dip, ready in a snap with your Instant Pot!

My favorite local Middle Eastern style restaurant has the best red pepper hummus. Ever. It’s creamy, slightly spicy and perfect for dipping pita pieces, or just eating off a spoon.
I set about trying to recreate their recipe, and think I finally hit on it. The first step was getting my Instant Pot out to make the garbanzo beans fresh for the creamiest hummus.
What is hummus?
According to Dictionary.com, the definition of hummus is “a paste or dip made of chickpeas mashed with oil, garlic, lemon juice, and tahini and usually eaten with pita.” So good, right?
And let’s take it up a notch or three by adding in some roasted red peppers.

Now, let’s talk beans, shall we?
Most of us get the…<ahem> digestive issues that come with eating beans. Noticeable issues that we all try and blame the dog for. Why does this happen? The answer is simple-phytaic acid. This is what can cause stomach upset and that tell tale “music”.
How do you reduce this acid? One way is to ensure your beans are soaked for at least 8-12 hours in clear, cool, water before using. You can also “cheat” by using the quick soak method for beans .
Ingredients you need:

- Prepare beans by either soaking overnight or using the quick soak method.
- Add soaked, drained beans to Instant pot liner and cover with 4 cups of fresh water. Set lid, and ensure the valve is on “sealing”. Cook, then release pressure naturally.
- Drain and rinse beans and place in food processor or blender. Add remaining ingredients, except water. Stream water until hummus reaches desired smooth consistency.
- Scoop into a bowl, and drizzle extra olive oil over surface.
- Enjoy within 7 days, keeping leftovers refrigerated in an air tight container.
Can I just used canned garbanzo beans for this hummus?
Yes, you will want to use 2 15 ounce cans, drained and rinsed cans of garbanzo beans.
Will the roasted red peppers make this spicy?
Red peppers, even roasted, are not spicy at all. They will rate a 0 on the scoville scale. If you want it spicy, try add in diced green chilis instead the red peppers.

Ingredients
- 1 roasted red pepper, chopped into pieces
- 2 cups garbanzo beans, soaked
- 3 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- juice of 1 lemon
- 1/4 cup sesame seeds
- 1/4 cup fresh chopped parsley
- 3/4 cup olive oil
- 1 cup water
Instructions
