Lemon Pepper Chicken

Need a dinner that is easy enough for weeknights, but fancy enough for weekends? This lemon pepper chicken will fit the bill!

TO FLATTEN YOUR CHICKEN:

1. Lay your bird breast side down on a steady surface. 2. Using a sharp pair of kitchen scissors, cut alongside the backbone, starting at the bottom of the thigh and working your way up. 3. Repeat on the other side.

4. Remove the backbone and use for homemade broth. 5. Turn the chicken breast side up and gently press down to flatten. 6. Repeat with recipe.

-Whole chicken, cut as directed above.  -Olive oil. -Salt. -Black pepper. -Zest of 2 lemons. -Juice of 2 lemons.

Ingredients

Preheat oven to 400 degrees.

In a medium sized bowl, mix seasonings together.

Rub the chicken on both sides with olive oil and seasonings.

Roast for 30-40, or until juices run clear.
