Potato, Chorizo and Egg Breakfast Tacos

Take a flour tortilla and stuff it with just about anything from seasoned ground beef and hot sauce to black beans.

Wash, peel, and dice potatoes into 1 inch chunks.
In a large pan, heat the oil over medium heat. Add the potatoes and stir to coat with oil. Cover with a lid and allow to cook for 15 minutes.
Add in onions and garlic and cook with potatoes until done.
In a separate pan, heat the beef chorizo.
Crack eggs into a bowl, and stir with a whisk until fluffy. Add salt and pepper and stir. Pour into pan with chorizo and scramble together.
Serve potato and veggies topped with chorizo and egg in a warm tortilla.
