Mashed Potato Pancakes 

We love potatoes in our home! Fried, baked, boiled, whatever goes. But, our favorite is mashed potatoes. 

When we have mashed potatoes, I always make extra for potato pancakes the next day. Rich, creamy, and so good! 

– Cooking oil of choice  – Leftover mashed potatoes – All purpose flour – Eggs – Cheddar cheese – Salt – Pepper – Cornmeal
