When my entire family gets together for a meal, we make a big deal out of it. Very often, its Thanksgiving big. Turkey or roast, potatoes, dressing, all the trimmings. And lots of dessert.
Traditionally, apple pie used to be served with cheddar cheese on top of it. The apple and cheese combination is said to have originated in Yorkshire, England, where it can be known as “Yorkshire pie”. The practice of combining cheese, fruit, and nuts dates back to ancient times. These were often served at the end of a meal because they were thought to aid in digestion.
It also is a very tasty combination, with the crispy, juicy apple and the bite of the sharp cheddar cheese. There is nothing quite like a slice of fresh from the oven, warm, apple pie with melty cheese on top. Unless you bake the cheese into the crust.

The first time we tried this, my entire family was hooked. We loved the sweet apples and the bite of the cheese that each tender forkful brought. No more having to try and spread the cheese around to get it to last with the slice of pie. It’s baked right into the crust.

What kind of apples are best for pie baking?
You want an apple that can hold it’s own with flavor and texture for this pie. Some great choices are:
- Braeburn
- Cortland
- Granny Smith
- Yellow Gold
- Crispin
- Honey Crisp
- Red Delicious
I like how the tart Granny Smith cooks up in pies. It’s a good all purpose apple that is great for cooking and really pairs well with the cheddar cheese. However, you can use any apple you truly wish, or any combination of apples. If you try a sweeter apple such as Honeycrisp or Red Delicious, you may want to cut back the amount of sugar you add to them for the filling.

Ingredients
- 2 1/2 + 1/4 cup all-purpose flour
- 1/2 cup + 2 tbsp sugar
- 1/2 tsp salt
- 1 cup shredded sharp cheddar cheese
- 1 1/2 sticks of butter, cold and cut into small piece
- 1/2 cup cold water
- 6 Granny Smith apples
- 2 teaspoons cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/4 cup bottled lemon juice
- 1 egg, beaten + 1 tbsp water
Instructions:
- Preheat oven to 400.
- In a food processor, pulse 2 1/2 cups flour flour, 1/2 cup sugar, salt and the cheese until well mixed.
- Add the butter and allow the food processor to run until it becomes a crumbly mixture.
- Drizzle in water 1 Tablespoon at a time until the dough comes together. You may not need the full amount of water, depending on humidity.
- Transfer dough to a floured surface and knead a few times until smooth.
- Divide into four pieces and refrigerate for 1 hour.
- Remove from fridge and roll each piece of dough out between two pieces of wax paper.
- Place two of the crusts in the bottom of 9 inch pie pans, pierce all over with a fork.
- Make the filling by coring and chopping the apples. Mix in the remaining flour, sugar, spices and lemon juice.
- Fill crust with apple mixture.
- Cut the top crusts into 7 strips, and layer over apple pie mixture. Brush with egg and water mixture.
- Bake for 45 minutes. If the crust begins to brown too much, cover the edges with aluminum foil or a special crust shield.
- Let pie cool completely before serving.
