It’s often that white rice is used in this recipe. However, I prefer the nutty flavor of brown rice myself. If you want to use white rice, feel free to do so. The cooking time will be lessened to 12 minutes.
What kind of brown rice should I use?
While there are many kinds of brown rice, the most common in the grocery store are quick cook, long grain, and short grain brown rice. For this recipe, I used long grain brown rice. If you only find short grain, it’ll cook the same and the end result will taste the same.

Cilantro Lime Brown Rice in the Instant Pot
Bright, fresh, citrus fluffy rice with a nutty texture in an easy Instant pot recipe! You'll love how quickly this comes together and your family will love it!
Ingredients
- 2 cups brown rice
- 2 cups broth or water
- 1 teaspoon salt
- 1/2 cup fresh chopped cilantro
- zest and juice of 1 lime
Instructions
- Add rice, salt, and liquid to Instant pot.
- Set lid and make sure valve is on "seal".
- Set to brown rice time, or if using an older model, "manual" for 30 minutes.
- Release pressure quickly when timer goes off.
- Meanwhile, chop cilantro, and zest and juice lime. Stir into cooked rice.
- Fluff with fork and serve.
