Filling, delicious, and full of taco flavor, this loaded potato taco bake is an easy weeknight meal your whole family will love!
Back when my kids were in TaeKwonDo, they were working out hard 5 days a week. There was an hour of P90X that they would do to stay in shape PRE class, then 2 1/2 hours of class.
Class time consisted of training, sparring, and my kids teaching the lower ranks. All that activity meant they were super hungry all the time. I needed easy food and LOTS of it.
Potatoes were one of the ways I was able to fill them up without breaking the bank. Those kids could eat! One night, we had some leftovers of this and that, and I was faced with hungry kids. I threw what I had together, covered it with cheese and prayed like you wouldn’t believe.
This loaded potato taco bake was created, loved and enjoyed! The best part is that it used all the leftovers I had in the fridge.
You will want to start off by cubing up 3-4 leftover baked potatoes. Add 1 pound of ground taco meat, and top with a jar of salsa. Sprinkle 2 cups of shredded cheddar cheese on top, and bake in preheated oven for 30 minutes. Top with sour cream and chives and serve hot.
Now, what if I don’t have all those leftover in my fridge?
No worries! The directions to make this completely from scratch are just as easy. Of course, once your family enjoys this, you’ll want to have a couple of extra baked potatoes in the fridge just for this recipe!
What kind of meat can I use?
I like ground beef, but you can use any ground meat you want. Use what you would normally use for taco night in your home. Try:
- turkey
- ground chicken
- bison
- any combination you desire
Loaded Potato Taco Bake
What kind of potatoes work best with this?
I used russet potatoes for this taco potato bake. In my opinion, they make the best baked potatoes, and the boys love their baked potatoes. You can use whatever potatoes you would like in this, however. Try red potatoes, golden potatoes, even sweet potatoes for a new twist!
Ingredients:
- 3-4 medium sized russet potatoes
- 1 pound ground meat of choice
- 3 Tablespoons taco seasoning, homemade
- 1/2 cup water
- 1 16 ounce jar of salsa
- 2 cups shredded cheddar cheese
- sour cream
- chives
Instructions:
- Preheat oven to 400 degrees F.
- Scrub and pierce potatoes and place in oven to bake for 45 minutes. If using leftover potatoes, skip this step.
- Brown ground meat, and add water and taco seasoning. Simmer for 3 minutes. Set aside.
- Once the potatoes are done, allow to cool slightly until you can safely cube them.
- Place cubed potatoes in the bottom of a 9 inch skillet or greased 8×8 baking pan.
- Layer ground taco meat over potatoes.
- Spread salsa on top of meat, and sprinkle cheese over top.
- Place back in oven and bake for 30 minutes, until cheese is melted and bubbly.
- Top with sour cream and chives and serve hot.
