We love strawberries here on our homestead. The memories of my kids when they were younger, picking strawberries from the field, sticking every other one into their mouth as fast as they could is still one of my favorites. In my mind’s eye, I can still see the red juice dribbling down their chins and onto their shirts.
We tried for several years to grow our own strawberries, but the birds got to them every single time. I think out of 400 plants, over the course of 4 years, we got a total of ONE fresh strawberry. That was the one that the boy ate before I even could say, “Let me get a photo first.”
Most of our strawberries have to come from the grocery store now. The local UPick farm has closed down, and the nearest one is now over 100 miles away. Sure, it’d be a great day trip, but time doesn’t always allow for that. So, I make do what what I can.

What are scones?
A proper British scone looks more like a round biscuit than a triangle. They are cut in half, and eaten with butter or clotted cream. British scones can be sweet, or savory, and usually do not contain the same amount of sugar or butter that an American version does. The reason is simply because they slather theirs with butter and jam while eating.
The version that is most popular in the United States is the triangle shaped ones, like you see here. We tend to like our sweet and buttery flavors, thus making them different from the British version. American scones can be both sweet and savory, but many are on the sweeter side.

Ingredients:
- 1 3/4 cups all purpose flour
- 2 1/4 Tablespoons baking powder
- 1 Tablespoon granulated sugar
- 1/2 teaspoon salt
- 4 Tablespoons butter very cold
- 2 large eggs
- 1/3 cup milk
- 2 cups strawberries chopped
- 1 cup powdered sugar
- 1 Tablespoon milk
Instructions
- Preheat oven to 375 degrees.
- In a medium mixing bowl, combine flour, baking powder, 1 Tablespoon sugar, and salt.
- Cut butter into little cubes and combine with flour mixture. Cut with pastry cutter or 2 forks until mixture is the crumbly.
- In a separate bowl, whisk together eggs and milk. Stir into the flour mixture.
- Fold in strawberries and mix to combine. Turn dough out onto a parchment paper lined baking sheet.
- Using wet hands, pat into a circle about 1/2″ thick. Cut dough into 8 triangles and place into oven.
- Bake for 20 minutes, then remove from oven. Carefully separate the triangles and return to oven for 5 more minutes.
- While scones are finishing baking, combine powdered sugar and milk and stir to make glaze.
- Drizzle glaze over hot scones and allow to cool a bit before serving.
