What has less than 1 gram of fat, over 8 grams of fiber and 7 grams of protein in a 1/2 cup serving? The humble black bean. They are a versatile powerhouse of nutrition that can go from a side dish, and black bean recipes can range from soup, and desserts.

Dried beans are often very cheap at the store. They are easy to store in bulk, and generally can have less sodium than their canned versions. The biggest problem with dried beans is they often need to be soaked first.

Why do you need to soak dried black beans?

Soaking softens and rehydrates the beans, reducing cooking time. It can also reduce the the phytonutritents that can cause gas, and flatulence.  Of course, no one knows for sure HOW long you need to soak your beans to rehydrate them properly. Do you soak overnight, or just an hour? What happens if you forget to soak them? Are you doomed to never eat perfectly cooked beans again?

WHAT IS AN INSTANT POT?

Unless you have not had the internet, pinterest, or have been generally living under a rock, you have at least heard of, or have seen the Instant Pot. It’s an amazing, all in one, kitchen appliance that you can brown, sautee, cook, and reheat in. All on the countertop, and without giving off a lot of heat.

This electric pressure cooker has presets for soup, chicken, stews, chili, and even yogurt. A twist of the lid, a touch of the button, and you have your next meal coming up fast.

And it can make dried beans lickety split. Even without soaking first.

Why don’t I need to soak my beans first?

The Instant pot is amazing for this, allowing the beans to be re hydrated and cook all at the same time. Your result is tender, tasty black beans that are ready for your next recipe in no time at all. No more watching the pot on the store, either.

Won’t I get the gas issues without soaking them?

To be perfectly honest, I have not noticed any more flatulence with presoaked beans and dried beans cooked in the Insant Pot without soaking. Of course, you can always soak them first, then cook them up in the Instant Pot, too. Simply cut the cook time down to 1/3. That’s for those of you who remember to soak them. The rest of us? 5. When cooking beans, never fill the Instant Pot more than halfway full. Beans and grains expand and need the space to do so.
