Of all the things I do for my family, cooking is my favorite. I love being creative in the kitchen, and seeing what I can come up with for any meal. Very commonly, what I create is a home run. I have had a few “okay, at least we have food” episodes, though.
What I don’t like to do is wash dishes. Raise your hand if you’re with me on that? The thought of having to do hours of washing plates, pots, pans, and tableware can send anyone to the drive through. That’s why I like this one pot pasta meal.

What is a one pot pasta meal?
It’s a dish that you can create, cooking the pasta right in the sauce. The pasta itself becomes infused with whatever you flavor that sauce in as well.
Because you are cooking the pasta with the sauce, you will generally need more liquid than the recipe calls for. I have found that a ratio of 7 cups of liquid to one pound of pasta works best for most one pot pasta recipes.
Ingredients you need
- Avocado oil
- boneless, skinless chicken breast or thighs
- Onion
- Garlic, minced
- Salt
- Black pepper
- Italian seasoning
- Tomatoes
- Butter
- Flour
- Broth
- Milk
- Fettuccine noodles
- Parmesan cheese

Making your pasta
- In a large pot over medium high heat, heat avocado oil. Add chicken and brown on both sides, and cook until medium done. Remove to a plate and set aside.
- In the same pot, add onion, garlic, and seasonings. Stir to combine and saute. Add in tomatoes and stir.
- Melt in butter and add flour to the pot, forming a roux. Add in chicken broth and deglaze the pot.
- Stir in milk and cream and bring to a boil. Turn heat to a simmer, and add in noodles. Stir well to combine.
- Cut chicken into bite sized pieces and add back to the pot.
- Cover pot, and simmer, and stir frequently. You want the noodles to be al dente.
- Add Parmesan cheese and simmer. Remove from heat and add remaining basil. Stir and serve.
Can I make this gluten free?
My favorite gluten free brand pasta is Tinkyada, and it holds up great in this recipe. It’s nearly impossible to overcook, even in this one pot recipe, so you don’t wind up with a mushy mess.
To replace the flour in the roux, you will also want to substitute the milk, flour and butter to make the roux for 3 cups of heavy cream. Heavy cream will thicken on it’s own as it’s heated, giving you a thick, silky sauce with no gluten as well.
Which is better, chicken thighs or chicken breasts?
Either one will work great in this recipe. I prefer to use boneless, skinless, chicken thighs due to a taste preference. However, chicken breasts will work if that is what you prefer to use.

- 1 pound tomatoes, cut in half (Roma, or calabrese preferred)
- 2 Tablespoons butter
- 2 Tablespoons flour
- 4 cups broth
- 3 cups milk
- 1 pound fettucine noodles
- 1/2 cup shredded Parmesan cheese
- 1 small bunch fresh basil (about 1/2 cup)
Instructions
- In a large pot over high heat, heat avocado oil. Add chicken and brown on both sides, and cook until medium done. It will finish cooking in the sauce. Remove to a plate and set aside.
- In the same pot, add onion, garlic, seasonings and 1/2 of the tomatoes. Stir to combine and saute for 3 minutes.
- Melt in butter and add flour to the pot, forming a roux. Add in chicken broth and deglaze the pot.
- Stir in milk and cream and bring to a boil. Turn heat to a simmer, and add in noodles. Stir well to combine.
- Cut chicken into bite sized pieces and tear basil into small pieces. Add the chicken and half the basil to the pot.
- Cover pot, and simmer 10-12 minutes, and stir frequently. You want the noodles to be al dente.
- Add Parmesan cheese and remaining tomatoes, and simmer an additional 2-3 minutes. Remove from heat and add remaining basil. Stir and serve.
