This slow cooker cheeseburger soup is one of our favorite comfort foods. It’s rich broth, savory chunks of beef, and creamy Velveeta cheese combine so beautifully. Add some crusty bread, and you are set for a meal that you won’t forget!
The weather never seems to get cold here in South Texas. Well, there IS that week in January that you need a sweatshirt, but who’s counting? However, a family favorite meal is soup. Even in the hottest part of summer, we eat soup at least once a week.
This could possibly be called “cheeseburger and fries” soup, because it has the addition of potatoes that are tender. I’ll let you decide.

Ingredients you need:
- Avocado oil
- Onion
- Garlic
- Ground hamburger
- Potatoes
- Canned tomatoes
- Velveeta cheese
- Salt
- Ground pepper
- Beef broth
Making Your Cheeseburger Soup
- Dice potatoes into 1 inch chunks.
- Heat the avocado oil on medium high in a large skillet.
- Saute the onion and garlic. Season with salt and pepper while sauteing. Add hamburger, and cook until no longer pink.
- Add potatoes, diced tomatoes, beef broth, and the hamburger mixture from the skillet to the crock pot. Stir to combine.
- Stir in Velveeta cheese, cover, and cook in crockpot.
Can I use chicken broth instead of beef?
This recipe has been tested with beef broth exclusively. However, there is no reason you couldn’t make it with chicken broth, or even water if you wanted to. Just be aware that you may have a different flavor. And it may be more to your liking, so win win!
What to top your soup with:
- Shredded Cheddar Cheese
- Cooked bacon of choice (we use turkey)
- Sour Cream
- Pickle Slices

I don’t like to use Velveeta, can I use regular shredded cheese?
Yes, of course. I would suggest swapping out the Velveeta with 2 cups of shredded cheese. Add it in the last 40-45 minutes of cooking.

Ingredients
- 5 medium potatoes, cubed
- 1 Tablespoon avocado oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 pound ground hamburger
- 2 15 ounce can diced tomatoes, with liquid
- 1 teaspoon salt
- 1 teaspoon ground pepper
- 2 pounds Velveeta (or similar type melting cheese)
Instructions
- Dice potatoes into 1 inch chunks.
- Heat the avocado oil on medium high in a large skillet.
- Saute the onion and garlic for 3 minutes. Season with salt and pepper while sauteing. Add hamburger, and cook until medium done.
- Add potatoes, diced tomatoes, beef broth, and the hamburger mixture from the skillet to the crockpot.
- Stir in Velveeta cheese, cover, and cook on high for 4 hours or low for 6-8 hours.
Notes
You can peel your potatoes if you wish, we just prefer ours with the skin on.
