Moist and fudgy, these brownie bites are a perfect treat! White chocolate throughout gives it a kick up another notch, too!

The Frenchman is a choco-holic. Anyone who knows him in the least can attest to that fact. Hubby says he “doesn’t like chocolate” but that has often proved to be a lie.
Especially when a good brownie is in the picture. Soft, moist, fudgy and super easy brownies. It just doesn’t get better than that, right? Add a glass of cold milk, or a cup of your favorite tea and we are in business!
I don’t know about you, but the idea of making a pan of brownies just isn’t a good thing. Why? Because we tend to eat the…entire…pan.

Me as an adult: “I can eat as many brownies as I want, and no one can stop me.” Also me as an adult: “I ate the entire pan of brownies, and no one stopped me. Now I feel miserable!“
Is this you, too? That’s why I love making these white chocolate brownie bites. One or two is more than enough, and it’s easier to say “NO more” when you can put the rest away, and wash the pan.
Yeah, I know you can do that with pan brownies, but stick with me here, okay?
What if I don’t have mini muffin cups?
Mini muffin cups are easiest to get the brownie bites removed. However, if you don’t have them on hand, simply use a good cooking spray, butter, or coconut oil for a prepared pan.
Ingredients for the brownie bites:
- All purpose flour
- Salt
- Cocoa powder
- Baking powder
- Butter
- Sugar
- Eggs
- Vanilla
- Milk
- White chocolate chips
Making easy brownie bites
- Preheat oven and prepare mini muffin pan.
- Combine flour, salt, baking powder, and cocoa powder in a medium sized bowl and mix together.
- In a mixer on medium speed, beat sugar and eggs until creamy.
- Add melted butter to sugar and eggs, and mix well.
- Alternate adding dry ingredients with the milk, mixing after each addition.
- Stir in white chocolate chips.
- Bake in 350° oven until toothpick comes out clean.
- Cool completely on cooling rack.
How many brownie bites does this recipe make?
If followed, this recipe will make 48 mini muffin sized brownie bites. If you want to make them larger, you can make 24 muffin sized brownies, or 24 brownies baked in a 9×13 pan.
Please note that the baking times may vary a bit if you make them in a larger size. You don’t want to over bake them. It would be better to take them out of the oven a minute too early than a minute too late. Simply allow to cool completely in the pans and they will finish cooking.

Ingredients
- 1 1/2 cups flour
- 1 teaspoon salt
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 cup butter, melted
- 1 cup sugar
- 3 eggs
- 1 teaspoon vanilla
- 1 cup milk
- 1 package white chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Grease a 24 piece mini muffin pan with butter or coconut oil. You will need to use this twice.
- Combine flour, salt, baking powder, and cocoa powder in a medium sized bowl and mix together.
- In a mixer on medium speed, beat sugar and eggs until creamy.
- Add melted butter to sugar and eggs, and mix well.
- Alternate adding dry ingredients with the milk, mixing after each addition.
- Stir in white chocolate chips.
- Bake in 350° oven for 20-22 minutes, until toothpick comes out clean.
- Cool completely on cooling rack.
