Carrots of any sort can make an easy side dish. They can go from a cold bar with dips, in a lunch bag for on the go, to a hot side dish with ease. There’s not much to dislike about them, truly.
Carrots are a good source of vitamins and minerals, and are a favorite for many. Who could not love carrots?
When I was younger, my mother would make them smothered with butter, brown sugar and cook the carrots until they were nearly unrecognizable. Now that I am grown up, I think these oven baked carrots are a much better way to enjoy this sweet veggie.

What kind of carrots do I need?
You can use any size carrots for this dish. I like the “full length” carrots at the store, but baby carrots will work just fine as well.
Don’t want the huge carrots? No problem. You can take the larger carrots and cut them down as well.

What will the texture be? I don’t like mushy carrots.
The texture of these carrots is not mushy at all. They are still lightly crisp with a delicate flavor balance. Roasted vegetables are still tender, and have all the sweetness you crave in comfort food.
How do you get carrots that are tender without the mush? Allowing them the time to roast with the honey to carmelize brings out the baked carrots sweetness. Adding in the balance of fresh rosemary and ginger kicks these up a notch and a half.
Ingredients you need:
- Carrots
- Butter
- Honey
- Fresh ginger
- Fresh rosemary

Making your Honey glazed carrots:
- Preheat oven to 400 degrees.
- Melt butter in skillet. Turn off heat, add ginger and rosemary and allow to infuse for 5 minutes. Stir in honey and set aside.
- Wash and peel carrots. Pat dry. Prepare baking sheet with parchment paper.
- Place peeled carrots on parchment paper.
- Drizzle 3/4 of the infused honey butter over the carrots. Gently toss the carrots to coat.
- Roast in the oven for 20 minutes, turning over after 10 minutes.
- Drizzle remaining infused hone butter over carrots, and cook an additional 10 minutes.
- Remove from oven and serve.
Other tips for delicious carrots
- Use a sheet pan to allow the carrots to be in a single layer. This helps them to cook more evenly.
- You can peel your carrots or not. If you choose to not peel them, simply wash them well to remove any dirt.
