A delicious way to enjoy your leftover meatloaf, these meatloaf sliders are easy and fun to make!

I used to wonder “What exactly are these ‘leftovers’ that people keep talking about?”. When my kids were younger, and in taekwondo 5 days a week, leftovers just didn’t happen. I could barely make enough food for a meal as it was!
There is one meal in particular that is still memorable to my family. I made a meatloaf for lunch, with mashed potatoes, home canned green beans and home canned peaches. I made “extra” so that I could have leftovers for sandwiches and other meals. When I say extra, I mean that I made:
- 5 pounds of ground beef meatloaf
- 5 pounds mashed potatoes
- 1 gallon green beans
- 1 gallon peaches
- 1 loaf homemade bread
You’d think that there would be plenty leftover, right? WRONG. My kids were so active, working out 3 hours a day, 5 times a week and needed sustenance. My family of 5 ate all that food in ONE sitting!
My kids ate the seconds and thirds, but you get the idea.
Now that my nest is emptying out a bit, I have more leftovers. The Frenchman has been craving lots of comfort food lately, so meatloaf was on the menu. Lo and behold, I have leftover meatloaf! Yay!!
I decided to make meatloaf sliders for lunch, and it was a hit!
What are sliders, exactly?
Sliders are “little burger” type sandwiches. Truly a comfort food anytime, even as a snack, they are also great on the go sandwiches. They are perfect for leftover meatloaf sandwiches, as you can stretch those meatloaf slices a lot by adding it to a bun, and melt some cheese on top for a yummy treat!

Ingredients:
- Avocado oil
- Leftover meatloaf
- Slider buns
- Cheddar cheese
- lettuce, tomato, red onion, and condiments as desired
Making your meatloaf sliders:
- Heat the avocado oil in a large skillet
- Cut the meatloaf slices into 1/2 so they fit on the slider bun and place carefully in the hot pan. You may need to do 2 batches, as you don’t want to overcrowd them.
- Cut the cheese slices in quarters.
- Fry meatloaf, flip over and add to each slice of meatloaf.
- Cook on other side, then remove to bun.
- Top with desired condiments and enjoy!
Can I use any bun with this recipe? What about sliced bread?
Absolutely, you can use whatever bread you want! I prefer to use these homemade hamburger buns with mine, but you can certainly use whatever you have on hand.
Do I have to use sharp cheddar cheese?
No, but it’s really good on these sliders. Trust me on this. However, if sharp cheddar is too tangy for you, try American, mild cheddar or even provolone, if you want.
