Who is ready for some easy, delicious comfort food? I know my family is always in the mood for anything with beef and potatoes. This super easy hamburger soup is one of our favorite Instant Pot soup recipes.
I love that you can just “set it and forget it”. It’s easy to walk away and grab some family time, read a chapter in a book, or empty the dishwasher while dinner is cooking. The result is a rich, hearty soup with an all day slow cooker flavor, done in less than 30 minutes.
The other benefit to this easy soup is that it is food storage friendly. You can use ground beef you have in your freezer, or freeze dried beef. The rest of the ingredients are easy to store, making this soup recipe a great idea for your long term storage menu rotation.

Ingredients you need:
- Hamburger
- Onion
- Garlic
- Potatoes
- Carrot
- Canned corn
- Canned green beans
- Canned peas
- Diced tomatoes
- Tomato paste
- Vegetable boullion
- Salt
- Black pepper
- Celery seed
- Olive oil
Making your hamburger vegetable soup:
- Peel carrot and dice. Dice potatoes, onions, and mince garlic.
- Place hamburger meat and olive oil into the inner pot of your Instant Pot.
- Set your Instant Pot to saute mode.
- Add onions, garlic, and seasonings to hamburger meat and stir to combine. Brown the beef until cooked through.
- Add potatoes, carrot, corn, green beans, peas, diced tomatoes and tomato paste to the inner pot. Stir to combine.
- Stir in boullion, celery salt, and salt and pepper.
- Cover and lock lid of Instant Pot, and cook. Use natural pressure release, then stir and enjoy.

What kind of potatoes can I use?
I generally use russet potatoes, because that is what I have on hand most often. However, you can use any you would like. Try red potatoes, or Yukon Gold for a different flavor twist.
Can I use fresh tomatoes instead of canned?
Absolutely! I find that when my garden is full of tomatoes and I am running short on time canning them, I use them in this delicious soup recipe. Simply replaced the canned diced tomatoes with 2-3 large tomatoes, chopped into small pieces. Make sure to add the liquid from the tomatoes, too!
What about frozen vegetables instead of canned?
You can certainly swap out frozen, or even fresh vegetables instead of canned ones. Simply add 1 cup of water or vegetable broth to the soup to replace the liquid from the canned veggies.
