How do I keep my black bean patty from falling apart?
Now, most black bean veggie burgers can be dry and tasteless, but adding a bit extra fat and liquid to the mixture will help solve that issue.
This recipe uses an egg for the extra fat and help with binding the patty together. However, if you need a vegan option, you will want to use ground flax seed in place of the egg.
Another thing that works for me to keep the burger patties from falling apart is the addition of the all purpose flour. I have not tried a gluten free version, but you can try using brown rice flour or almond flour in place of the white flour.

Ingredients you need:
- Avocado oil
- Onion, diced small
- Garlic, minced
- Black beans
- Egg (For vegan option, ground flax seed)
- Salt
- Black pepper
- Cumin
- Chili powder
- All purpose flour
- Water or broth

Make your black bean burger:
- In a large skillet over medium high heat, add 1 Tablespoon avocado oil. Sautee the diced onions and garlic for 5-7 minutes, until caramelized.
- Using a blender or food processor, add beans, onions, garlic, and egg and 2 Tablespoons avocado oil. Begin to blend, then add seasonings and blend until a thick paste forms. (it will be like a hummus texture)
- Scoop into a large bowl and stir in flour.
- Using the same skillet, heat remaining avocado oil over medium heat.
- Using a measuring cup or muffin scoop, add bean batter to the hot oil. Fry 4 minutes on one side, flip and fry 4 minutes on the other side.
- Top with cheese if desired.
Other tips for cooking the burgers:
- Make sure your skillet isn’t too hot. You want to heat it over medium heat. This helps keep the patty from drying out, cracking, and falling apart.
- Add a bit of crunch by dipping the homemade black bean patty into an egg wash, then dipping in bread crumbs before frying.
