We go camping at least once a year. More often if at all possible, honestly. I love the outdoors and the slower pace of being in nature fully. Making a warm, satisfying breakfast can be a challenge when you are cooking over an open fire, or on a small camping stove.
But no more! Here’s how to make easy homemade pancakes by making up your own homemade pancake mix. This great recipe is family tested and family loved!

Ingredients you need for the pancake mix:
- Mix the above ingredients and store in a tightly closed container.
- Store in a ziploc bag, or in a gallon sized glass jar.
Ingredients you need for the pancakes
- Premade mix
- Eggs
- Water
- Butter, or coconut oil

Making the fluffiest pancakes from scratch:
- Mix the wet ingredients together, and then mix in gently with the dry ingredients until just mixed. You will want your batter to be lumpy.
- Preheat your griddle and pour the batter on a hot greased griddle.
- Cook until the cake looks dry on the edges and has bubbles all over the middle.
- Flip, and cook another minute until cooked through.
- Serve with butter, peanut butter, maple syrup and/or fruit!
Do I need to add vanilla extract?
You certainly can, but I don’t use it when camping. Therefore, the recipe here doesn’t call for it. If you want to add it, I would suggest starting with a teaspoon and going from there.
What if I don’t have buttermilk powder? Or I don’t want to buy that?
No worries! We like the tang of the buttermilk in our pancakes, but you can easily substitute a cup of milk for each cup of water. If you need it to be dairy free, swap out coconut milk, or homemade almond milk.
Other tips for a fluffy pancake:
- Don’t over mix your batter. Light and fluffy pancakes need a batter that is full of air.
- When cooking your pancakes, only flip them one time, when the first side appears to be dry, and the edges are golden brown. Overcooking them will lead to tough pancakes.

Can I make these homemade pancakes in advance and just freeze them?
If you want to make pancakes in advance, double or triple this batch. Cool completely, then layer in a single layer on a baking sheet. Freeze 2-3 hours, then store the pancakes in a ziplock bag.
To reheat, you place in a toaster oven (not toaster!), in the microwave, or in the oven at 350 for 5 minutes. I don’t like to heat them on the stove top for some reason they turn tough when I do.

- 1 Tablespoon baking powder
- 3 Tablespoons granulated sugar
- 1 Tablespoon salt
- 2 cups buttermilk powder
To make the pancakes
- 2 cups premade mix
- 2 eggs
- 2 cups water
- 4 Tablespoons butter, or coconut oil, melted
Instructions
- Mix the wet ingredients together, and then mix in gently with the dry ingredients until just mixed. You will want your batter to be lumpy.
- Preheat your griddle and pour the batter by 1/8 cup full on a hot greased griddle.
- Cook until the cake looks dry on the edges and has bubbles all over the middle.
- Flip, and cook another minute until cooked through.
- Serve with butter, peanut butter, maple syrup and/or fruit!
